AN EASY RECIPE

INGREDIENTS USED

CASHEWS

Cashew nuts are the star ingredient of these cashew cookies and adds the richness to this utterly delicious Cookies.

We have consciously added the powdered cashews in the dough so that you can feel the presence of Cashews in every bite and not just at different places.

But at the same time, chopped cashews will bring that much appreciated bite too in the cookies.

SUGAR

we have used bura sugar which is healthy being made directly from sugarcane.

However you can also add refined sugar after powering or jaggery powder too.

CARDAMOM POWDER

A flavour of Cardamom goes hand in hand with the cookies of any type. And cardamom is the best alternative essence when it comes to Cookies.

In case you don’t have Cardamom powder, then you can crush few green Cardamoms and use that.

The most convenient way is when you are using refined sugar and need to powder it.

Just add few Cardamoms with sugar, grind and they are done.

BUTTER

Butter is the fat content used in the recipe. But in place of butter you can use desi ghee.

WHOLE WHEAT FLOUR

Either whole wheat flour or all purpose flour, you can use any of the mentioned.

Generally all purpose flour is not accepted as a healthy flour and mostly people love to replace it with whole wheat flour or any other healthy flour.

So we have kept our cookies healthy with the use of wheat flour.

SALT

Even though these are the sweet biscuits but a pinch of salt is must to go in it.

Salt rather helps in enhancing the flavours of the sweet recipes.

And note, if you are using salted butter, then no need to add this extra pinch.

BAKING SODA

Baking soda is a leaving agent which helps in making the cookies extra crisp.

MILK

Though butter is there to provide enough moisture in the dough but still you need little more for binding and here, the role of milk comes.

The quantity of milk is not specified and you need to add as much as required to bind the dough.

EXPERT TIPS

  1. Whisk the butter until creamy. It makes light and cripsy cookies.
  2. Prefer to add powdered sugar. it dissolves and mixes well with the butter.
  3. Firstly use your hand in assembling the dough. This way you will get right assesment how much milk needs to be added.
  4. Keep eyes on cookies during last minutes. They may turn dark or even burn if you assesment of time goes wrong.
  5. Let cookies cool down completely. They will be crisp only after cooling down.
  6. Store them in airtight otherwise they may turn soggy.

PREPARATION OF INGREDIENTS

1.Take 1/4 cup of cashews and grind them to a fine powder.

2. Roughly chop few cashews making them 2 tbsp of chopped one.

MAKING OF COOKIES

3. Add butter in a bowl.

4. Whisk until it turns creamy. With electric beater, it will take 2 to 3 minutes and with hand whisk, it will take more time.

5. Add sugar into a bowl.

6. Whisk them again until both assembles together very well.

7. Now add wheat flour, powdered cashews, chopped cashews, baking soda and salt. Skip the salt if the butter is already salted.

8. With the help of your hand, start bringing everything together so that a dough can be formed. Remember, only bring the mixture together and don’t knead it.

9. If the mixture is not binding, add a very little milk at one time. We only need to add about 2 tsp of milk for making a dough.

10. A normal dough is ready.

11. Make small lemon size pieces of the dough. We could made 24 pieces.

12. Now roll each piece into a ball by rolling them between your palms one by one.

13. Arrange all the balls on a baking tray lined with greased butter paper or parchment paper. See, keep distance in each ball as they will spread a little on baking.

14. Mark a design on the cookies using a fork.

15. Place the tray in refrigerator for 30 minutes.

16. After the said period, bake @160°C in a preheated oven in the middle rack with both the rods on for 25 to 30 minutes.

1 cup = 200 ml

  • 1/4 cup Cashews 30 g/20 pieces
  • 1/2 cup sugar 100 g - we have used bura sugar. You can use refined sugar after powering
  • 1/2 tsp cardamom powder
  • 1/4 cup butter 50 g/half stick
  • 3/4 cup whole wheat flour 115 g
  • 2 tbsp cashews roughly chopped
  • Pinch of salt
  • 1/2 tsp baking soda
  • 2 tsp milk more or less
