This Gluten Free Starbucks Oatmeal Bar Recipe is the perfect Starbucks Michigan Cherry Oat bar copycat. Although Starbucks no longer makes these Michigan Cherry Oat Bars, if you have ever had one then you know exactly how good they really are. A crispy, buttery oatmeal bar, topped with a homemade cherry pie filling, finished off with another layer of oat crumble and a cream cheese glaze. These Cherry oat bars are guaranteed to be your new favorite!

Getting diagnosed with Celiac Disease 11 years ago took away the fun of getting all the delicious desserts that Starbucks has to offer, so it was only right I take matters into my own hands and remake some of them gluten-free.

If you are new to a gluten-free diet, have Celiac Disease, or even if you’re not gluten-free, these bars are so good, that you would never guess they are missing the gluten. I have tested these out as a dairy-free version, and they come out just as good! You can find the dairy-free details below on how to make these bars.

  • Quick Oats: make sure to use quality gluten-free quick oats. I like to use Bob’s Red Mill.
  • Rolled Oats: I also recommend using quality rolled oats like Bob’s Red Mill.
  • Flour: I recommend using Bob’s Red Mill gluten-free 1-1 flour
  • Vanilla extract: my go-to gluten-free vanilla extract for this recipe is Singing Dog vanilla alcohol-free vanilla extract
  • Brown sugar
  • Baking powder
  • Salt
  • Butter: always make sure your butter is at room temperature.
  • Pitted fresh cherries: for easy removal of the pit, I like to use this gadget below. Also, make sure to remove the stem.
  • Corn Starch
  • Lemon juice
  • Water
  • Sugar

Instructions to make Starbucks Oatmeal Bars

  • To make the cherry filling, place a small saucepan over medium heat. Begin by adding the cherries, sugar, cornstarch, and lemon juice. Bring this to a boil. Once the mixture has begun to boil, continue stirring for about 6 to 7 minutes. As it begins to thicken, slowly add 1 to 2 tablespoons of water. Continue stirring until your desired consistency has been achieved. You will want this to be thick enough to spread, and not too watery, then set aside.
  • Preheat the oven to 350 ℉ and lightly coat the pan using a pastry brush and coconut oil. Then line the pan with a parchment. I like to use the ones like this with the handles for easy removal.
  • In a large bowl, add all of the dry ingredients and mix together. Then add the butter. Using either your hands or a pair of gloves, covering your hands, mix this together until completely combined. The mixture will become crumbly.
  • Next, add ⅔ of the mixture to the baking pan. Using the bottom of a cup press the mixture firmly down into the pan.
  • Then, add the cherry filling and spread evenly across.
  • Next, sprinkle the remaining crumb mixture on top of the cherries.
  • Bake for 35-43 minutes until golden brown. Allow these to cool completely.

Cream Frosting

  • In a mixer, using the paddle attachment, combine all of the cream cheese topping ingredients. Once fully combined, drizzle over the bars. Then slice and enjoy!
